You can buy olive oil with neutral taste if you wish. It doesn't have to be cold-pressed virgin oil. You can have mechanically extracted heated flavourless olive oil. But personally I use butter for cakes.

I can easily buy great olive oil but the taste makes it unusable for some things like mayonnaise for example. I'm explicitly looking for lower quality processed olive oil without strong taste.

We have long term studies that show that replacing saturated fats with seed oils actually reduces cardiovascular events. What matters ultimately is the outcome, not the mechanisms in our body as to how those good outcomes came to be. We will figure those out too with time but the body is really complex and a study that shows inflammation doesn't show the whole picture regarding health. e.g. olive oil causes temporary arterial stiffening but health outcomes of people who eat olive oil compared to saturated fats is far better.

Seed oils are about as good as olive oil regarding long term outcomes, by the way. We don't have any studies that prove one is decisively better than the other.
