oddly enough i am also making chicken and mushrooms. but i'm not doing a pie, i'm just doing it all in a pan in the oven w/roast garlic and smashed taters with a pan sauce gravy thing.

Bake a chicken 150ยฐ 1.5 hours.
Sautรฉ diced mushrooms
Add chopped onions and garlic
Add juice from chicken pan, or chicken bullion
Add chopped up chicken
Add whipping cream and corn starch to thicken it up

Crust:
330 grams flour
8 grams salt
185 grams butter
80 grams filtered water

Hand mix cold butter, salt, and flour, add water, mix, cover, let sit for 30 minutes.
Roll out to size. Cook around 35 minutes depending on size. Also beat an egg, brush on top of pie and cut some breathing holes in it.

Russet PEI potatoes, poke em with a fork, set them in salt water for 2 hours, dry them, chip them into fries, dry them again, cover in EVOO, air fry them for 5 minutes at 400f, remove em from air fryer and let them cool, then deep fry them under crispy golden brown

instead of using all butter, I find using a 50/50 blend of lard and butter makes a nice flaky pastry.
Sometimes I up the fat content to 66% (in terms of baker's percentage) and make fruit hand pies out of the dough. You don't work the fat in as much.
