Interesting concept, could even be feasible to an extent. Now evolutionarily it might just not make sense as a virus would rather optimize for a particular tissue niche but anyway... solution is ofc immunity (natural or induced) against its intercellular machinery. It can not easily vary what it relies on to hijack a cell for its own replication. T killer cells and NKs is what you want.

Attaching is only the first part. There are numerous other defenses cells, especially eukaryotic ones, have to prevent viruses from hijacking’s their cellular machine early. RNAases for example.
There is also the replicability aspect. Even if you did design “the perfect virus” it would degrade over time as replication errors compounded.

Hm, would that be remotely plausible? We'll some viruses can hide pretty well in a cell. It got a highly variable surface receptor (likely by "random" protein coding sequence reshuffling). We might even make it a retro virus that can go dormant inside the host cell (or some other dormancy to evade killer cells). Part of its receptor would still need to stay stable but they might be no easy binding targets. Could need us to target something else entirely, perhaps an approach with RNAi to go after it's genome (which would be comparably large to accommodate for the receptor reshuffling). This might lead to escape variants with strongly reduced reshuffling capabilities (which btw might outperform the original strain through faster replication and go into competition with it)...
