Given the placement of the strikes, they seem to have focused on cutting off access to the facility, making it impossible to recover the uranium or continue using it as a development site.
That is the weakness of relying on natural terrain to protect your facilities. Even if the facility itself can avoid destruction, it still has to be accessible somehow, and those access points are always vulnerable to attack. The more access points you give the site, the more vulnerable it is to infiltration and the harder it is to defend from direct assault, but it does make it more resilient to air strikes. In the case of Fordow, since it is so deep in Iranian territory and well defended on all sides by military installations, they seem to have erred on the side of giving it multiple access routes, which increases its resilience against this kind of attack.
Thus I don't think striking access tunnels will render the site unusable as they hoped, more likely the damage caused by in-fill from the bunkerbusters will cause the site to temporarily close until it can be cleaned up.
