They didn't. Same reason they thought the literal temple was going to be destroyed and raised in 3 days, not realizing it was his own body that is the temple.

They 'knew'. As in maybe they recalled hearing something like that from some elder jew before. But even while it was all happening they did not believe. When Christ our Lord died the apostles didn't stick around for 3 days waiting for Him to come back. They ran and hid and tried to act like they never knew Him. What makes the fulfilling of prophesy compelling is not that it happens, but that we only seem to realise things after the fact.

I thinks that's the reason our sins were forgiven, Jesus went to the lowest points of society and still found people who live and die by God's word to the point where they could walk directly into the maw of oblivion just to make His word ring true
