you can't even start that kind of lifestyle unless you're a landowner, probably passed down for generations.
But once you own land and have learned the skills necessary growing up sure, you can do that because most of what you need is things that you can produce through your own/your wife's own labor.
IE you raise sheep, you gather the wool, she spins it into thread then makes your entire family's clothes from it. Or cotton or linen. If you have sizable agricultural land, you can grow/raise your own food and clothing.materials.
You'd build your own house by having learned how by helping other people build homes, and you'd continue helping building homes for your community to teach the next generation. Digging wells and raising houses and barns are communal projects within small Amish communities.
But in all that you've taken care of your shelter, food, and clothing needs.
But without land? You can't do any of that. You're stuck buying food and clothes from stores and renting with the hopes of owning 1 fucking acre for a house on it sometime in your life.
and many people never get that, and rent, and so their basic shelter and food and clothing needs take up most of what they make, now add kids
