you cant digest chitin. grasshoppers, for example, are 'served' ground up, and they are very bad for you. lobster and shrimp don't count, because they are big enough where you can peel off the chitinous exoskeleton and eat the meat underneath

Chitin is full of parasites and shouldn't be consumed. Ocean bugs have meat that can be seperated from the chiten and land bugs don't.
