Can is fine unless dented/rusted etc. Open it, if in doubt, throw it out. Cans are fine like 5+ years after "best before", which is just for premium texture/taste

It's a spider web due to government regulation, lawsuit evasion, and greed. There is a bunch of fronts on it. The best way to deal with it is to be knowledgeable on how long it takes food to expire and having the ability to sniff food. Sense of smell is evolutionary to keep you away from things that are bad. If it smells bad it's bad 99% of the time. It's like a jeet, it smells bad so its bad. Spoiled milk and Jeets are one of the same.

Frozen meat goes bad too. You ever have a a 3+ year old pork chop from the back of the freezer? It doesn't taste good. Freezing isn't indefinite, dehydrating isn't indefinite either but it lasts a lot longer depending on what was dehydrated. Canning isn't indefinite either. Everything has a shelf life and spoils. That's simply the way matter works.

The date you find for manufactured food products are there for quality purposes, not for safety. The company is telling you if the product is consumed after this date they do not guarantee the product will taste the best or have the right consistency. Manufacturers of food are not required in the us to put a safety date on packaged food because the assumption is all of the bad bacteria was either killed during the manufacturing process or itโ€™s growth is controlled by other factors like ph, water activity or oxygen availability. The only thing left that should be able to grow are spoilage bacteria and if they have multiplied enough to get you sick the food with have physical signs of spoilage and wonโ€™t be consumed.

No, they are forced to put expiry dates much sooner than the average time of expiry, to avoid instances in which a product spoils faster than intended because various of issues like temperature or improper storage conditions. It's better to lose money on a few unsold batches that reach expiry, than to lose millions in lawsuits.

I work in a grocery store, I would definetly follow dates on anything frozen, produce, dairy and meat. Most of the time the stockers, the final mile transportation company and delivery drivers ignore temperature safe guidelines allowing the food to grow bacteria before being put back in the safe zone.
