ackshually it's the exact opposite, at least from my experience. I recently started making my own sauerkraut and kimchi, after I realized it was only storebought sauerkraut that I dislike, and homemade is totally different. I'm someone who usually can't eat much cruciferous vegetables like cabbage/brussels/broccoli/etc because if I eat more than a serving I get terrible stomach cramps and bloating. But I found out this doesn't happen after fermenting. IDK, I guess the bacteria break down whatever is in the vegetables that causes gastric problems for me. So I can eat a massive amount of homemade sauerkraut with zero issues.

I'm growing cherry tomatoes, sweet potatoes, and scarlet gourd this year. I need to figure out some way to preserve just the tomatoes, maybe turn them into a sauce. The sweet potatoes preserve themselves.

We do! I own 12 acres of land, but we only use a small bit of it for gardening, its a 100x100 yard garden, and we pressure can almost everything.

Hand built shelves in my basement, have at least 500 cans of each veggie, Green Beans, Carrots, Beets, Tomato juice, hell we even have like 200 cans of saurkraut. There's a lot of benefit in having a tradewife.

You can literally freeze tomatoes without doing anything to them. Obviously when you thaw them out, theyโ€™re not gonna make great sandwich tomatoes but you can use them for sauces and stews, etc..
