I recently started making my own sauerkraut and kimchi, after I realized it was only storebought sauerkraut that I dislike, and homemade is totally different. I'm someone who usually can't eat much cruciferous vegetables like cabbage/brussels/broccoli/etc because if I eat more than a serving I get terrible stomach cramps and bloating. But I found out this doesn't happen after fermenting. IDK, I guess the bacteria break down whatever is in the vegetables that causes gastric problems for me. So I can eat a massive amount of homemade sauerkraut with zero issues.

Hand built shelves in my basement, have at least 500 cans of each veggie, Green Beans, Carrots, Beets, Tomato juice, hell we even have like 200 cans of saurkraut. There's a lot of benefit in having a tradewife.
