I love Qubes OS! It's like having a cluster of virtual mini-computers at your disposal! Anything you don't want having network never gets network. Any darknet or VPN router you set up properly (and you can run multiple simultaneously), anything downlink of it will never escape to the clearnet. I have AI running with a passed-through secondary GPU. You can even run Windows in Qubes OS! Strongly recommended to have 2+ video cards (assign the weakest as primary in EFI, for dom0).

OP does go a bit far with Gentoo, but I agree with him spiritually on Qubes. It's just Fedora (or Debian, or w/e), just one more abstraction layer up: your computer is not 1 computer with 1 active OS, but is 1 computer with many active and networked virtual computers each running 1 active OS. It's not hard, if you can do it with multi-NIC PCs in your basement, Qubes does it automatically, nearly turn-key. Just need to learn the concepts of template vs application VM, and a little basic admin tasks in bash. Any highschooler should graduate able to install and use Qubes!

All three viable options for modern desktops are absolutely garbage, but at least Trooniux is FOSS and isn't fully owned by globohomo big tech.
For desktop, I currently run Manjaro, for servers I either run Debian or a BSD flavor (mostly FreeBSD or NetBSD) and for network equipment I go with OpenWrt.
