Adapting to it. Early in our whiteness we didn't have food storage over winter 100% perfected so sometimes potatoes, fruits, grains would start to ferment. Hungry cold people in the middle or end of winter would still consume it for survival and found the sense of warmth and good feelings to be beneficial. So we started fermenting stuff on purpose and have been doing so for 1000s of years
It's one reason why alcohol seems to fuck up equator bros, they never have a reason for long term food storage so never encountered fermentation on the regular
