The only studies that show seed oils being unhealthy was done in mice. Are you a mouse? We have tons of human trials that show health benefits, especially when the oils replace saturated fats.

There was actually only one controlled trial with people eating the same meals every day, under supervision, for months at a time, one group fed food cooked with butter, the other with seed oils. It was from the 70's or 80's. It unequivocally showed the seed oil group did worse.

You don't even need these types of studies though. Seed oils = high in omega 6 oils. Omega 6 oil = inflammation. That's it.

I'll also add there was a meta study in, I believe, 2013 that showed sat fats are NOT related with an increase in all cause mortality. Lots of nutritionists seethed at it, and demanded a retraction, but they didn't do it. The cope afterwords, and still is today, is that "Ok well sat fats aren't technically bad for you but sat fats are high in calories and low in nutrients so if you choose to eat non-saturated fat foods which are lower in calories and higher in nutritional value, we can still say that it's healthier to replace a diet of saturated fats."

It's really sick, insidious shit. It's sad that retards like you still fall for it as well.

Ideally you should reduce intake of both fats and also seed oils, but seed oils seem to be the lesser evil regarding long term health.

Oxidation of oils is a concern but even frying with the oils was shown that they barely oxidize even after many cycles if the correct temperatures are used. It can only become a concern in fast food restaurants when they don't change the oil regularly. I don't remember the exact number but I think it was after 21 heating/cooling cycles the oil starts to deteriorate. Tallow can take some more cycles but they should still change it regularly.

I think the whole tallow vs seed oils in fast food restaurants is complete bullshit either way. If you're regularly eating fast food you don't care about your health in the first place.

I have a few issues with this:

I look at outcome studies, not chemical or mechanistic studies. I find that those just detract from the effects on humans. We have mechanistic studies on animal proteins and saturated fats causing inflammation in arteries. We also have mechanistic studies that show olive oil also causes inflammation in the arteries.
Yet the outcome is what actually matters, not the mechanisms because the human body is very complex and a temporary inflammation in the arteries doesn't tell us much.
Exercise for example also causes inflammation in the arteries and yet it's good for us long term. Long term health effects of olive oil in the diet is also well studied and it's positive.

And to answer your question, my guess would be polyphenols and different pathways which improve blood lipids rather than making them worse.
