I am not even saying they should do it, I am just puzzled as to why they didn't consider such simple strategy

Because Israel doesn't have enough nukes to wipe out Iran's entire military industrial complex, whereas Iran has enough Iranians to march through Iraq to Israel to liberate Palestine.

The only thing stopping it, is the American military occupation of Iraq. Which Trump has now jeopardized as he cannot afford a draft.

Why would they? They already have access to the world's market, allies in the West and Middle East (Egypt and Saudi Arabia), and tons of influence. Drop some nukes and you become enemy number #1 to all around and even the West is going to cut support. Plus what would they gain it's not like Iran is going to vanish into nothing they will retaliate full on even if they have to march through Iraq to do it no one will stop them, if anything they'd join them.

Some sources even suggest that we have hydrogen bombs, most estimates say that we have 90 or more nukes that are avilable to be launched, which is enough to wipe out all of the major cities in the middle east with some nukes left in reserve

It's a complete coin flip how the world will react.
There's a reason they haven't been used since WW2.
Outcome nr 1. The country will forever be the country that took the cowards way out and launched a nuke.

With Palestine that's radiation and it's a nuke.
With Iran, that would start a true jihad at worst and at best Iran turns into a giant Haiti with radioactive zones and 80 million refugees will flood out into places like Iraq Pakistan turkey and eventually to Israel
It's also insane to use a nuclear weapon unless you have to. Million will die and huge sections of once habitat places are not longer habitatal
It's not about the mass killing it's about ruining the best rare land on earth for decades. You can't do it and expect good things.

My honest guess is it's around 110-120 now but holding. No lower than 80.

The reason im guessing 80 lower limit is a bunch of different reports 90-100 id the general guess. I think with their rates if refining and thinking they'd want 120 for a Trident delivery system. Air, sea, land. They might have enough material for 500-300, but it's probably around 150 more they could make given they made some more and those sound pretty high.
