Italian chefs will openly acknowledge that most of their dishes are made scarcely, because of traditional poverty. They even have a name for cooking with only the best and most extravagant ingredients (I forget the term). They all agree that the extravagant 'method' is better, because OBVIOUSLY making food with more and better ingredients produces a better end product.
But then when prosperous Americans create a pizza using larger amounts of better cheese, better sauce, and better dough, baked in better ovens, suddenly getting them to admit that the American pizza is just an objectively better dish is like trying to pull pennies out of a jew's purse.
By the Italian's own logic, it's obvious to the point of stupidity that the American variation of pizza would be better. It has more cheese, more meat, better and more savory toppings. Sometimes old school Neapolitan pizzas have higher quality dough, but the best dough in the world can't beat more and better toppings.
But they can't do it. They just can't bring themselves to admit that the American pizza is better. Maybe they're disdainful of Americans specifically or Anglos in general, or maybe it's just a point of pride for them where they would rather choose to be blind than admit the truth.
But American pizza is clearly better. It's not even close.
