tipping is a retrograde custom.
its also a power play.
it allows the well heeled to flex their privilege and keep the poors in their place.

if you make $27 tips on a $10 bill customary surely the poors will go elsewhere
its clearly a flex which is why the custom lives.
also allows the wealthy to get choice table reservations in fine dining restaurants

Waitstaff give a lot more than their time and labor. Tipping shouldn't cover their wages, it should be their bonus on top of regular wages, which could be standard minimum instead of the $2 or whatever it is they make now where, if tips don't make them hit the state or federal minimum, the employer is supposed to make up the difference.
I don't think most waitresses act on that though, too much bother accounting for mixed cash.

You used to go to a restaurant and tip 15 percent. Now it’s 22 percent, and the taxes and “service charge” are baked into the bill so you’re essentially paying a 30 percent tip.

I just don’t eat out as much, especially when fast food joints now do tipping.

What they do now is you don’t get a paper bill, they just come by and swipe your card. So now in my city there’s a list of places that do a service charge because it’s almost impossible to tell otherwise unless you can do the math in five seconds.
