Honestly, if you really go to uni (STEM), then only to acquire some habits of structured thinking, working, arguing (you could learn it from books/online, but uni forces you). Then drop out after 3-4 semesters if you feel like it. That's only to build a basis. When you utilize AI for whatever you want to do, you need to have some background (otherwise you wouldn't know what to request/design and how to evaluate its output/performance) and know how to approach novel aspects. Expect that AI will be so capable in the next 2-3 years and IoT/robotics becomes way more approachable, affordable, and reliable that you can build almost whatever (prototype) you want. I don't say you have to do all that, but in this huge inflating opportunity bubble there may be things for you, your niche to start with.
That's perhaps not the best career advice, but it's what I would do.
