Don't say that, it's not true. And correct anyone who said it to you. In a normal flight following the rules, the pilot flying would have his hands full and the pilot monitoring might touch the throttles.

But in a flight as abnormal as a pilot suicide, there's no barrier to the pilot flying reaching over and pulling the switches to cutoff. He can hold the yoke with one hand.

Asked an airline pilot who flies Boeings, 0 possibility of that. Both switches would have to independently fail 1 second after each other, becoming the first of those switches to ever do so and then the second switch to ever do so, on the same plane, at the same time. 1 second is however exactly enough time it takes to pull each swich out of its position, toggle it down, and push it in. Also in addition to being the only switches in that area that work that way, they're the only switches on that entire console that work that way, so it could not be accidental.
