Lawyer here. Your prospective boss isn't telling you that this is part of the negotiation process in hopes that you accept their terms in a one-sided fashion. Edit the document (reasonably), sign, and return. If they have a problem with your edits, they can open discussion with you or just not hire you. You wouldn't be missing out on much judging from how this is written anyway.

A normal tech job with this overtime might be $125k to $150k. This is a middle management job if not director level. $200k base plus $100k bonus would be reasonable on the low end. Total comp could be up to $400k or $500k. It's 11 hour days but most of that should be email and meetings.
