Why do handcuffs require this time wasting extra step of awkwardly inserting a little pick inside it to "lock them"?
All it ever does is give the criminals one last chance to pull away and add more charges to the list.
Can any of you cops here explain what the deal is?

The question is implicitly "why don't they just lock automatically", the answer to which is to prevent over-tightening. If every progressive ratchet was locked in until you inserted the key, then it would be easy for them to become inadvertently too tight, which is prevented by locking it in a fixed position via a key

That’s to stop them closing not opening. So you can’t close them further and hurt yourself and waste peoples time having to open them so your hands don’t fall off.
I hope this helps though why you would need simple, obvious things like this explaining i dunno. You could use a search engine even.

Ex zogbot here, used to be a defensive tactics and arrest and control instructor. My day job was in corrections, mostly receiving. You check for tightness on handcuffs by feeling the gap between the wrist and the bars of the cuffs, then you use the nub on the back of the key to engage the double lock mechanism. It’s established in case law (can’t remember which case, been out for around 4 years) that the officer placing the restraints shall check for tightness and engage the double lock mechanism as part of regular procedure. If the cuffs aren’t double locked they can become tighter over time and if they aren’t tight enough they can be slipped. The locking mechanism ratchets and it doesn’t take much force to move to the next position. I have on at least two occasions received unconscious arrestees who had been cuffed without this procedure being followed. Both of them had significant injuries to the skin on their wrists from the cuffs. One of them had drunkly writhed in the back of the car and managed to avulse the skin from his wrists. The overwhelming majority of cops are evil retarda btw.

It does both.
To unlock them you insert the key and turn it toward the double lock, unlocking it, then you turn the key the other way and it pushes down the ratchet so you can open them.

I watch a lot of cop and detective shows. and I noticed a trend. a lot of the time when criminals run, it often does happen when getting cuffed for some reason. I see so many times when the cops turn them around and announce they're going to cuff them, maybe the reality sets in they aren't talking their way out or something and they flee, cause they could have took off any other time during this.

one clever trick I have seen a few cops use is like, making the criminal think its part of some search or sobriety test. like one made this drunk driver do all those tests like walking etc, and at the end says "ok last test, I want you to put both hands together behind you" *cuffs them* "you're under arrest"
they didn't have time to freak out and flee, I think its a nice way around this situation
