I dont think these machines will be replacing restaurant cooks anytime soon. They would definitely work for fast food and cafeteria meals but they can't do any of the nuance thats required for fancy or "finer dining" also most restaurants work on a shoestring budget they couldn't afford this machine

Same thing that happened when the stand mixer and most other automation were invented: less jobs but not 100% elimination.
A decade ago McDonald's had three times as many employees as they have now but with fewer locations. They've been silently automating everything so less employees can run the store. Automation isn't something that's coming for jobs, it's already here and has been here for as long as machinery has existed.

I work for a Subway that’s owned by my boss (all Subways are franchises). We don’t just make sandwiches. We clean, we fix things that break, yell at the homeless to leave outside. Constantly prep food, utensils, make strange sandwiches for the weirdos. If they can get a bunch of robots to do all of that, then I’m assuming those robots are going to need A LOT of maintenance. So working for Subway might just go from “Sandwich Artist” to “Robot Technician.”

Most kitchens prepare food in advance and then simply deep fry, pan fry or oven cook during service. In the future all the preparation will be done at a factory offsite and supplied to restaurants who simply fill up the machines.

I do the eggs separately, put them aside and then mix em when I put the rice. I make a really soft scramble at first so when I dump em with the rice they cook properly.

Seems like asians like their eggs well done with the rice. Also they put too much oil at first, i don't like that.

I think self calibration via AI will absolutely be a thing moving forward. The bigger issue is cleaning. Wok cooking for example, there can be a good amount of sauce and oil splatter that just naturally happens. But what you suggest, taking them down for a few hours, is honestly not crazy at all. Most restaurants have only a ~2hr business rush or even less around lunch, and a ~2-3hr business rush during dinner. They can absolutely afford to turn a couple of these off and clean them, then cycle them back on and clean the rest, then have everything up for dinner. I can easily see these being standard in a lot of places, shitty wok cooks are often the number one bottleneck in these kinds of restaurants.

If you want highly personalized, ready made food like a chef would make, you mostly do need to start by imitating what a chef would do. Starting with one prototype helps you see what does work and what you can get rid of and improve upon to get to the next iteration. Iteration, and deletion, both of these help each other and help you on your ultimate product goal.
