the shroud was burnt at some point during medieval times, they patched it as best as they could, it was a small patch not the whole thing, the samples they used to determined the dating came from this patch, there is a whole video in pints with aquinas in youtube explaining it, I'm so kind today that I'll even leave the link, enjoy:
