You're supposed to sweeten pasta sauce with carrots. That's the whole point of a mirepoix, the sauteed onions and especially carrots add sweetness without being overpowering. But Americans think vegetables are yucky...they never developed beyond the palate of a child.

>roast onions, garlic, carrots, celery, bell peppers then remove trash and add to food processor
>Puree
>add to stock pot and simmer
>add a few cups of old pasta water
>add basil, thyme, oregano, salt, bay leaves
>reduce to about half
>keep reducing and adding old pasta water and reducing again until you get that ragu. Takes about a day.
That's how you make marinara for that spagett.
If it's too acidic add a bit of baking soda. Simple as. It shouldn't be acidic if you're adding that good ass pasta water which i hope you faggots aren't dumping down the drain.

My grandparents did the sugar and ragu thing, also they would just leave the noodles sitting in the water until it was time to serve. Also the Parmesan powder was usually a few years out of date and forming into chunks but they still used it because the date is "just a recommendation".
