What exactly is the purpose of killing off most young men living in Ukraine and Russia? I assume somehow someone is trying to do that and resources/land is a secondary concern.

Both sides are actually somewhat sensitive about meatgrinding zoomies. The most casualties are typically 30+. The average age of both armies floats around 40. Hohols in particular are well aware of the dangers of cratering out the future generation that will be tasked with rebuilding the state after the war.
