Other agricultural stuff. General menial labour and maintenance. Animal care. Processing the cotton into yarn and so on. There's always work to do on a farm, no matter what season it is.

I visited Andrew Jackson plantation in Nashville once and it really doesn't seem like his slaves had all that bad of lives. He let them carry guns and hunt for their own food. He gave them his old house to live in when he built a new one. Idk maybe he wasn't as brutal as some of the other owners.
