What about making yogurt out of raw milk? My fermenting experience is that beneficial microbes will crowd out the harmful ones and make raw foods unquestionably safe to eat. I do lots of ciders, pickles, and sour kraut. I haven't gotten into yogurt or cheese making, but I do have tons of raw dairys around me.

In pasteurization you heat up the milk, this kills harmful bacteria.
