The flavor of pepper is in the oil located inside of the peppercorn. When ground that oil is exposed and starts to evaporate. It isn't evaporated quickly, mind you, however most pre-ground pepper is too finely ground and has been sitting around long enough that its flavor is noticeably diminished. The same is true for while bean vs pre-ground coffee.

It isn't a massive difference but you will notice the difference in taste and especially the smell if you spend time cooking. If you are someone who smokes (pot, cigarettes, etc) or drinks a lot of sugary drinks, coffee, or alcohol, odds are low you will notice any difference because your sense of taste is diminished.

Long pepper was grown in Europe and honestly has a better flavor. Pepper wasn't the big spice being traded, just a byproduct of all the other stuff. Hell, saffron is still more expensive by weight than literal gold.

Writing? Sure. Education, religion, technically church "business" was conducted in Latin but if they needed a roof fixed they would have contracted it out to guildhall in their local language.
The language of business would have been dependent entirely on the port where you wanted to conduct your business in. London would have been Elizabethan English. The strangest thing about the way you spoke would be your accent but you could theoretically get around that by saying "Oh I'm Portuguese but grew up on trading caravels around the Mediterranean this is just how we speak there. With no one to maintain or replicate them they're just going to end up in some King's personal collection. Valuable yes but not world changing and probably not the most valuable thing you could bring on that time machine.
Unironically spices like fresh pepper, cinnamon, nutmeg etc would be more valuable than modern firearms unless you have a plan to reverse engineer the gun you bring, set up a factory (using materials that haven't been invented yet) and mass produce them.
1 AR-15 would be incredible yes, but no one would understand how to use it and it would be sold as a collector's item. 1 pound of fresh pepper everyone on the docks understand what it is, what it's worth, and wants to trade with you.

It is at least interesting that even though the reformation was largely about reintroducing the vernacular language into worship, that all worship conducted in Oxford and other universities was still in Latin. The prayerbook says that worship should be done in a language "understood by the people", and Latin was still the language of the university. And it wasn't just a written language either, they were arguing and debating fluently and passionately in Latin, hurling insults and slurs so good they had to be forgotten by time.
