I tried to look up how their indexing works and supposedly they use Bing, so as far as I know they just take the page's structured data and don't really crawl beyond that.
Also at the very least the title and the first post don't have the link, so it seems even weirder it would crawl through the thread and specifically pick that link.
From what I've see it's a mix of checking structured data, HTML tags and if that fails textual analysis.
It's likely that for Amazon it got the 2 days from the information days since it knows on Amazon that's a common datapoint for all books.

I am unsure if this applies to eBooks (I've never used KDP before), but it seems like books can absolutely choose their publishing date. This Loeb copy of De Officiis is listed as being published in 1913, which obviously means the lister must have entered that date. Although, perhaps this is something that can only be done with Amazon's approval or maybe only for print books?

I have tried to find some info about publication date in Amazon's documentation, but all I could find was stuff about release date (which is just when people can buy it, so unrelated).
