judaism came into being like 2-3 centuries after Christ and was basically them trying to make sense of their religion, since the pre-Christian jews depended on the temple sacrifice, the romans destroyed the temple shortly after Christ.
There was basically 0 rationality what judaism was then.
Before the temple there was a huge variety in beliefs, some people believed in 4 books of scripture only, they had radically different theology, some didn't believe in immortality etc. The only unifing thing to pre-christian Judaism was temple sacrifice and the bloodline.

Modern judaism descends from the pharisee's in scripture basically coming up with a way of "how do we do judaism without a temple" but this wasn't really conceived of properly for several centuries like I said. Modern jews/judaism have very little to do with historical judaism pre-Christ, many of those just became Christians which is the fulfillment of the pre-Christian jewish people.

In terms of the "goyim suppressant" in the sense that Nieztsche talked about, this is actually basically just a protestant thing. Catholicism integrated a ton of folk/pagan traditions and was largely okay with it, astrology, greek philosophy and the view of the person. Martin luther and the protestants in general were deeply opposed to this, they hated the greeks. It gets to a fundamental philosophical question of the relation between nature and God.
