Its literally just uncultured fresh cheese which is called curd, cheese curds become just regular cheese legally after only 24 hours. The cheese curds are what make a good poutine, if they are good curds. The fries should be crispy too, ideally not McCains store bought crispy ones although those are fine if youre making it yourself. And yea meat gravy, chicken or beef.

Its hard to fuck it up. You can make it yourself in like 10 minutes of cooking fries, then dumping some gravy and cheese on it done. Shredded even will do, just normal cheese but thats technically imposter poutine. Has to have curds to be actual poutine.
