How come there are some people that are mentally ill that still have relatively normal lives where they probably have a gf/bf and are fit and healthy?

if you are mentally ill but dominant, outgoing, and charismatic you will still do well in life. everyone just hates self loathing, submissive, neurotic men. unless you're extremely good looking or something.

You can be mentally ill as long as you have good social skills

they have abnormal lives but are able to project normality due to adapting to survive or childhood therapy. if you are taught to mask, mirror, don't avoid others, and aren't abrasive people don't immediately hate you.

I suffer from scitzoeffective disorder and autism. It really fucked me up in my younger days. I actually went through homelessness and a serious drug addiction. Did a lot of therapy and busted my ass, but I got out of homelessness, found a job that I love, and today I'm living a decent life. It ain't perfect but it's decent.

Hard work, and a fuckton of therapy and self advocacy. That's how you get a relatively normal life despite serious mental illness.
