>>82178545 (OP) the higher the temp and the longer it soaks the more chemicals get extracted. if it's too hot or extracts too long it will become bitter so be careful. the trick is getting the temp just right. soaking too long is hard to do with a drip or pour over so you don't have to worry about that unless you're using a perc or something.
