So at work we handle glass for wineries and breweries. The pallets of glass are 7-8 feet tall. The old forklift guys are driving cat single-double's and they drag 4 pallets at a time across the floor to their location.

Every time Ive tried this the weight of the glass just pulls the pallets right off my forks. lifting the pallets off the ground and tilting back seems too sketchy so I dont know if they lower the forks all the ground to pin the pallet in place or what

If i read that correctly, they are pulling the pallets backwards and not pushing.
They would have to be using some angle to keep to pallets from binding up if the weight would keep them in place, like is happing to you. I'd be afraid of the ground biting the skids if I tried to pinch them down to move.
At my workplace we have these rolls of media paper that can be over 6ft tall on end. they drive them around standing up, not strapped down for now. One of the tricks is once you get into motion you dont want it to come to a complete stop, try to keep rolling momentum.
We have a part thats 55in high on the pallet, and the pallet weighs almost 840 lbs. We can carry them 2x high across the warehouse but have to tilt the forks on our lifts before they get off the ground. The natural taper of the forks will let the weight of the stack tip backwards at start, all bad news

To slide heavy skids across a smooth floor, think of it like you're trying lift just enough of the skid weight off the floor so that it can slide. If you lift too much, it's sketchy and the contents of the top skid feels like it might fall. If you lift too little, your forks will slide out like you said. You could just get out and wrap the contents of the top skid while you're still getting the hang of it.
Also you can't have any pressure points on the skid, meaning your forks have to be perfectly level with the skid you're lifting and not tilted back like you're picking up a normal load.

>t. lifted glass jars, lab equipment, motors, 300 gallon totes, 55 gallon drums of lubricant sketchily shrinkwrapped together on a iffy pallet (the final boss of lifting I think)
