More of a Rukia fan.
I think she represents the contemplative, cosmic, atmospheric side of the world of Bleach best of all, and embodies those qualities in her style of femininity, which in my opinion is one-of-a-kind in the medium. Feminine sensitivity and vulnerability combined with a steadfast and solid sense of honor, duty and conviction. I think the only other character I can think of like that is Liza Hawkeye from FMA.
The opening scene of the series with her on top of the utility pole under the full moon; and especially the scenes of her imprisonment in the tower awaiting execution, against the backdrop of the vast, empty blue sky, are some of the most powerful and profound images for me from all of anime, maybe. The latter one in particular evokes a mixture of calm and anxiety, a kind of focused, resigned anticipation that makes you feel alive and your skin tingle with the faintest perspiration. I like to imagine that's what preparation for death actually feels like irl, and Rukia's behavior and conduct in those scenes humanises her character like no tomorrow and draws a lot of affection and admiration from me.
Also she's extremely qt.
(And of course her bankai form is just absolutely angelic: controlled, reserved, understated feminine power in all its grace and elegance)

Hiyori is great, but in her case I think it's more because her archetype is great rather than her specific character. Unfortunately all the vizored's feel artificially shoveled into the story and their motivations are weak and all over the place. I feel the same about Riruka and the Fullbringers.
