There needed to be a character or characters that we care if they live or die, so the show needs us to be invested in at least Ponko and her kid so that when the virus mutates saving them becomes the stakes that matter. Humanity coming back after is the *reward*, but the stakes are saving Ponko.
Theoretically, the hotel becoming a place for alien guests could be argued to be the cause of this mutation in the first place. The virus kept getting exposed to more and more alien biologies until it finally found something it reacted with.
