Its popular BECAUSE its easy to self insert into comparatively, somewhat because it has some inherent wish fulfillment (a lot of people are sick of the current world and want to go to a fantasy world), and somewhat because the genre has been hijacked by lazy writers that lean heavily on said elements to carry them rather then telling something compelling relating to being in a different world. I would argue its mostly the latter since isekai existed long before the fad, shit like Escaflowne was an isekai. But again, the reputation of this didnt appear out of thin air.
