I didn’t take a photo but I had some things I wanted to get rid of in my fridge before I left for a week so I made a pasta
>cooked two strips of bacon
>removed, added in 1/2 yellow onion into the bacon fat
>was too much onion for the portion size so I cooked it down on low for like 15 min with the addition of a bit of oil
>added in garlic
>added some leftover cherrry tomatoes starting to turn
>cooked this down for like 20 min on low
At this point it looked like gross mush and my hopes were low
>added in a bunch of parsley on the edge of going bad
>cooked some rigatoni
>cut off a blue patch from some parmesan and all of the exterior of the cheese for good measure
>added in the not moldy parmesan and some pasta water
>added back in the cut bacon
>combine
Wound up being way better than I expected. Want to try again with roma tomatoes, some heavy cream, and less onion
