Are you drinking young sheng in the pic? I don't think young sheng is well suited to grandpa. I only do grandpa with shou and some oolongs, if the tea can't handle several minutes of 100°C then I wouldn't bother trying to grandpa style with varying temps. The appeal imo is that it's simple and low effort.
I just spit the leaves out of they get in my mouth, but ime they mostly sink and this is pretty rare, yours seem really floaty though.
