Late reply but you're right about this. I hate this shit in TSF stories and it's an instant turn off. It's an immediate red flag that the author doesn't understand how female sexuality works.
HOWEVER, I think you're overselling the degree to which the average woman is bisexual. Most self-proclaimed "bi" women still date exclusively or almost exclusively men, and almost always end up in long term relationships with men. Dick clearly does something for them that pussy doesn't. So I'm confident that if we're imagining a scenario where an "average" man turns into an "average" woman, the turnee would still experience very drastic changes in their sexuality.
