This side projects are not supposed to be resume padding, i can straight up lie if thats the case. I want to build things for fun, because i genuinely enjoy programming, didnt go to this path purely because of the money.

Think of a thing you want that you don't have, then make it.
I tried that in the past, see:
>an automated method to given a social media user, search for theirs interests, similar persons, liked pages
This is possible using some paid api for ig but i cannot do for tiktok
>run vidgen, imagen gen locally
Requires upgrading my machine.
>scraper that collects for market analysis, enrich ml models
Again, requires paid APIs. You can do some hacking to selenium prompt you to solve the captchas but fuck that, i dont wanna become a captcha operator.

if money wasnt the problem:
>refinivit, blomberg real time stock data
>program a bunch of shitty trading bots, backtester, logger, machine learning engine
>just spin every component as an ec2 instance
>see what coding AIs can do to maintain the system
>enrich the data using reddit API for sentiment market analysis
This toy would cost hundreds per month in APIs subscriptions.

Basically my cool ideas are always related to big data, cloud and now AI. I dont see the point in playing with open source projects, low level, linux, smart home, home servers and arduinos.
This year i started a side project but it involves only social media and manual market research with small datasets. Theres no coding.
