Aside from the obvious (video games), you can do everything you can do on a Mac plus anything that requires a discrete GPU or a x86 processor. The possibilities are endless. So unless you want to compile software for other Macs or develop for iOS or (Jobs forbid) visionOS, as far as I can tell buying a Mac is just kneecapping yourself for no reason other than vanity. Maybe I'm out of touch.
