Twisted-pair Ethernet above 10 gigabit is vaporware; the spec (802.3bq) was approved 9 years ago and nobody has ever made hardware for it.

If you can run your drops in conduit, do that, and you'll be able to pull whatever you want if you ever need to upgrade. But in either case, I'd go with Cat 6a, and fiber for anything where you might need more than 10 gigabit speeds.
