Trek humies had all the fancy automation and gene editing, but it lead to a cataclsymic war that almost wiped out the species. So the powers that be heavily restricted everything and created a culture that encourages people to do shit manually and LARP as various careers. This was all established during the early new age hippy period of TNG before the original creator died.
