the final file will always be matroska even if it doesn't have an mkv extension.
you can try to disable tags by passing `-metadata TAG_NAME=` (with no value) to ffmpeg. but you need to know the real name of the tag (e.g. using ffprobe), and i couldn't disable the default ENCODER (Writing application) tag with quick testing.
note that "Encoded date" and "Tagged date" may not be real tag names either. i don't know what your picrel is from, so i couldn't guess where they come from.
