It works just fine if you follow basic common sense protocols like having the printer provide a final proof of the actual ink color on the actual stock, that the client can then approve and sign off on.
Of course that can create added expense, but that's the cost of high precision/ nitpicking. If the client balks at the time/expense/hassle and says it's not that important then put *that* in writing and have them sign off on that, or politely decline the job if you think they are lying.
If the printer balks at creating/providing accurate proofs then they're the wrong printer for that job/client.
All of this is literally why the Pantone system exists as a color matching standard, it doesn't work without people who understand how to use it.
