Victor didn't destroy her because he was revolted by the female body parts, rather he was worried that she'd be also ugly, not love the monster back or she herself would become more evil, so being a bigger hassle.
Victor also very much loved Elizabeth and he becomes murderously vengeful once the monster kills her, or maybe you will say that means Victor's just bi and the monster is an allegory for a scorned lover
