Saying something changes when you're older is not claiming it's an on-off switch, but more so you reach the point in a gradual change where you start to actively notice it. Such as your hairline receding.
The opposite of not liking something isn't liking it in that context. Not caring is still the antithesis to not liking, as emotional and emotionless are opposites.
