I must clean it properly. I saw a chinese recipe once where they cut it put lots and lots of salt and wine, washed it a bunch of times with it, then strained and washed it with water. I have done this with every type of liver and it works. The bad fumes are on the surface.
Hearts are better tho - chicken, beef, veal, lamb. It doesn't have any of that taste.
