Because it reminds them that most humans are lowly, materially-oriented, and amused by simple things, which is something they don't want to believe. They want to believe all humans have souls and can "appreciate" deeper meaning. However, this is simply not true.
AI is merely a technological innovation that can be used to increase efficiency. It is neither evil nor good. It is currently being used to maximize the production of "slop" content, even though most of humanity craved this form of content far before the advent of AI, as well.
Again, leftists can't accept that reality does not reflect their worldview. Any time they see "AI slop" getting far more views or attention than wholesome human arterinos with intention, they become enraged, as it breaks this view that most of humanity cannot and will ever not surpass basic material understand (which is also why they hate capitalism working, too.)
