Because “cooperative economics” is a misnomer. Economics is by definition cooperative, and a grocery store without an incentive structure is going to be of lesser quality than a grocery store with traditional profit incentive structures.
If you want something like a co-op, go live in a farmer town. It’s ridiculous to ask for something like that in the capitalist beating heart of the western empire.
