They use their knowledge of the game to leverage probabilities to their favor, they then notice someone breaking the projected result of their game and watch them more closely, they then tell them they can no longer play for "card counting," if they give a reason, when card counting is just understanding the math of the game to leverage probability into your favor. There is nothing unbelievable about it, and it doesn't warrant suspicion of nefarious activity left out of the story. If they were actually cheating it wouldn't be a case of cutting them off, they would be arresting them.
